GThis cut is also know as butt chops, but don’t let the word chop fool you.  It is not at all a similar cut to a pork chop.  The two are from completely different areas on the animal.  

This cut is a full flavour, rich, and juicy.  No need to worry about drying this cut out, in fact you want to take it to a higher temperature where the fat will break down, and the meat will become even more tender.  

Perfect for the grill, cast iron pan or even oven baked.  This cut will not disappoint.
